A Recipe For…Carol's Courgetti

Our second episode of A Recipe For…features a heartwarming story from Carol – Programme Director at youth project The Avenues, an initiative supported by Sainsbury’s, Comic Relief and Feeding Britian.

This vibrant, nutritious dish has travelled through Carol’s friendships and into her family kitchen. She first discovered the recipe thanks to a close friend, who introduced her to its bold flavours, and it’s been a staple ever since, with her daughter even cooking it for her own children. Incredibly versatile, Carol has added her own twist to the recipe with tomato sauce and prawns but has also reimagined it through different global cuisines over the years – whether its incorporating ingredients inspired by Italian dishes, or the spices and flavours known and loved in West Indian cooking. 
 
Carol shares A Recipe For…Carol’s Courgetti which has travelled through her friendships and into her family kitchen. A friend introduced her to the dish over a homecooked lunch one afternoon and Carol instantly loved its versatility, vibrant flavour and its nutritional benefits. She now often serves it up for her own family and friends, putting her own twist on the dish by adding a rich tomato sauce and prawns. She often adapts the ingredients and flavours to different world cuisines including Italian and West Indian. 
 
Throughout the episode, Carol shares how food has profoundly impacted the lives of young people at The Avenues. The project is passionate about empowering children and young adults with the skills to cook and understand where their ingredients come from - not only to educate them, but also to help those experiencing food poverty feel confident in preparing their own meals with the support The Avenues provides. For many who attend the project, it may be the only hot meal they get that day.  
 
Si and Carol talk about the support The Avenues receives during the school holidays from Sainsbury’s, via Feeding Britain - one of Sainsbury’s funded partners, supported through our partnership with Comic Relief. This funding enables the project to provide healthy, nutritious, and filling meals during a time that can be especially challenging for families, with the absence of term-time support and rising childcare costs.
